The fruit was hand sorted before being whole cluster pressed directly into neutral French Oak. Native yeast was then coaxed into a long, cool fermentation to preserve the natural character of the vineyards terroir. No Malolactic fermentation was used in order to retain the crisp acidity and mineral character that come from these unique vineyard sites. The wine was aged on lees and hand stirred once per week until being gently filtered and bottled after six months.
