EXTREMELY LIMITED QUANTITY
The fruit for our 2012 Chassé Chardonnay was hand harvested from twenty year old vines shortly after dawn on October 11th at Durant Vineyards in the Red Hills of Dundee. Immediately following harvest, the fruit was covered and immediately transported to our winery where we hand sorted through the clusters as our winemaker made preparations to begin the art of limited input winemaking.
Fermentation began naturally by the native yeasts provided by the vineyard and our Chardonnay was aged sur lie (on the lees) for seven months in a blend of 100% French oak and stainless steel barrels. Bâttonage, which is the stirring of the barrels, was carefully performed weekly. These old world, artisanal winemaking techniques add a dimension of creaminess, texture and complexity to the mouthfeel while maintaining the wonderful aromas and flavors of the fruit.
