Tasting Notes: A seductive straw color greets the eyes followed by the aromas of ripe melon, citrus rind and lemon zest with hints of ginger spice. On the palate, you’ll be enticed by a tropical fruit basket flowing with pineapple, guava, mango and minerals in the pure, fresh scent.
The “Chaustinelle Reserve” is a beautiful expression of Oregon style Chardonnay. It is well integrated, smooth and rounded, defined and focused, medium bodied with great texture and a long, lingering finish. Pairs well with the parmesan crusted pacific halibut and risotto.
Romance Copy: The fruit for our 2013 Chaustinelle Reserve is a blend of five distinct clones grown on the DANCIN estate and neighboring Panner-Hanson Vineyard. The fruit was hand harvested and immediately transported to the winery where the clusters were hand sorted so we could begin the art of limited input winemaking.
Fermentation began naturally by the native yeasts provided by nature in the vineyard and our Chardonnay was aged sur lie (on the lees) in a blend of 100% neutral French oak and stainless steel barrels. Bâttonage, which is the stirring of the barrels, was carefully performed each Friday. These old world, artisanal winemaking techniques add a dimension of creaminess, texture and complexity to the mouthfeel while maintaining the wonderful aromas and flavors of the fruit.
