This lush wine, green/gold in hue, offers mouth-coating flavors with richness and style. Apple, pear and papaya fruit holds down the center, with elements of toasted hazelnuts and butter pecan from aging in 20% new French oak. The creamy, smooth finish is delightful.

The fruit for the 2015 Capriccio Chardonnay comes from the DANCIN Estate Vineyard. This wine is a blend of Chardonnay Clones Robert Young 17 (50%), 76 (35%) and Wente (15%). The fruit was harvested on September 8, 2015 at an average chemistry of 23.5 Brix, 3.28 pH, and 7 g/L TA.
The fruit was hand sorted before being whole cluster pressed directly into twenty percent new French Oak. Native yeast was then coaxed into a long, cool fermentation to preserve the natural character of the vineyards terroir. No Malolactic fermentation was used in order to retain the crisp acidity and mineral character that come from this unique vineyard site. The wine was aged on lees and hand stirred once per week until being gently filtered and bottled after 5 months.
