The 2015 Chaîné opens with aromas of white flowers, chalky minerality, ripe pineapple and white peaches on the nose. The palate echoes these elements with a crisp, tropical fruit mouthfeel and long, citrus accented finish.
This wine is a blend of Dijon Clone 76 (51%) and Espiguette Clone 352 (49%). The fruit was harvested on September 8, 2015 at an average chemistry of 23.8 Brix, 3.35 pH, and 6.2 g/L TA.
The fruit was hand sorted before being whole cluster pressed directly into neutral French Oak. Native yeast was then coaxed into a long, cool fermentation to preserve the natural character of the vineyard’s terroir. No Malolactic fermentation was used in order to retain the crisp acidity and mineral character that come from this unique vineyard site. The wine was aged on lees and hand stirred once per week until being gently filtered and bottled after five months.
