The 2016 Pas de Trois begins with dark earthy characters of roots and fennel with a medium paced transition to Lapin cherries, soft floral notes, and a hint of oak. Upon first taste it carries cherry to the core but gently weaves classic forest floor notes, toasted hazelnut, and Damson plum. While these flavors mingle effortlessly, it is the texture that stands out in this wine. The supple weight coinciding with the wonderful tannins make this an exciting food wine.
